Cheesy Spinach Parmesan Chicken Casserole

This recipe is the definition of cold-weather comfort—rich, creamy, and incredibly satisfying without demanding much time or effort. Using just one mixing bowl and a single baking dish, you can create a garlicky, indulgent casserole that feels elevated while relying on everyday pantry ingredients. It’s ideal for busy weeknights when you’re craving something warm and hearty with minimal cleanup.

Chicken

4 boneless, skinless chicken breasts (about 1½ lbs), patted dry
Vegetables

1 (10 oz) package frozen chopped spinach, thawed and well drained
Sauce Base

1 cup (240 ml) heavy cream
Cheese

¾ cup (75 g) freshly grated Parmesan
Flavor

3 garlic cloves, minced
Spice

¼ teaspoon ground nutmeg (optional but traditional)
Seasoning

Salt and black pepper, to taste
💡 Helpful Tips:

Drain the spinach thoroughly to prevent a watery sauce.
Use freshly grated Parmesan for smoother melting.
Pat the chicken dry to ensure even baking.
Simple Step-by-Step Instructions

1. Preheat & Prepare
Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.

2. Prepare the Sauce
In a bowl, mix together the spinach, heavy cream, Parmesan, garlic, nutmeg, salt, and pepper until well combined.

3. Assemble the Dish
Arrange the chicken breasts in the baking dish. Pour the sauce evenly over the top, ensuring each piece is coated

4. Bake
Cover with foil and bake for 25 minutes.
Remove the foil and continue baking for 10–15 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the sauce is bubbling.
Optional: Broil for 2–3 minutes to achieve a lightly golden top.

5. Rest & Serve
Allow the dish to rest for 5 minutes before serving. Spoon extra sauce over each portion for maximum flavor.
